  • 110g All Purpose Flour
  • 1½ Teaspoons Baking Powder
  • ¼ Teaspoon Salt
  • 1 Slightly Rounded Teaspoon Ground Ginger
  • 1 Teaspoon Baking Soda
  • 40g Granulated Sugar
  • 50g Salted Butter (room temperature)
  • 2 Tablespoons Golden Syrup

Method

Preparing The Dough

Pre-heat the oven to 375ºF

Sift the flour, ground ginger, salt and baking soda together into a mixing bowl, add the sugar, then lightly rub in the butter until it resembles fine breadcrumbs.

Add the syrup and mix until everything comes together (use your hands once most of the syrup is incorporated

Divide the mixture into twelve equal balls, space evenly on a baking sheet and press flat until about ½” thick.

Bake on the center rack for 13-15 minutes until the are golden and have a cracked texture on top.

Cool on the baking sheet for 10 minutes and then transfer to a cooling rack to finish cooling.

Store in an airtight container.
